Monday morning is usually a baking one. Normally it’s a quick death session at the gym (though my back is currently not 100% atm) then home to do some baking with Aud for the other girls.
Today was Donna Hays raspberry friands. My girls love these and because of all the egg whites in them I always have enough yolks to make some yummy custard. The big girls will love this.
Lately they are eating like teenagers so after a reasonably large dinner they’re still hunting down something else 1/2 hour later.
These friands contain almond meal so not school acceptable but a great post school treat. And the custard they can have on some fruit or alone for dessert.
1 cup almond meal
1 2/3 cups icing sugar, sifted
3/4 cups plain flour, sifted
1/2 teaspoon baking powder
5 egg whites
1/3 cup fresh or frozen (i use frozen) raspberries (but could use any berry)
Preheat oven to 180C. Melt butter for 1-2 min in microwave.
Place almond meal, icing sugar, flour and baking powder in bowl, mix to combine.
Add egg whites, stir. Add butter stir again.
Spray cupcake or friand tins with oil. Spoon into moulds.
Bake for 15-20mins until golden and springy to touch.
Makes 10 (or more if you’re heavy handed with the berries as I was!!!) – Be careful adding too many berries though as they become a bit mushy.
Sprinkle with cocoa powder and/or icing sugar and serve.
